Fruity Fried Chicken

               This was something quite lovely.  When i learnt this 10 years back, I was real glad that the Chef incorporated fruits into main dish.  Though of course she told us that we could either use Chicken or not a very "fatty" belly pork.  Aw if you do drop by, as have not seen any of your comments in my blog, this is specially for you :)


                 5 pips                  Garlic
             300 gm                   Chicken/Pork

             300 gm                    Star Fruit, cut into big slices

              Marinade the meat with:-

                  1 Tabsp             Light Soya Sauce
                  1 Tabsp             Corn Flour
                                            Dash of  Oil
                                            Dash of White Pepper

                    [For non Muslims, you can add 1 teasp Shao Hsing Wine to the Marinade]


                 1                          Green Pepper
                 1                           Red Chillie
                 2                           Chilli Padi
                 4                           Water Chestnut


                   3 Tabsp                   Tomato Sauce
                   1 Tabsp                    Plum Sauce
                   1 teasp +-                 Sugar
                   1/4 teasp                    Salt
                    1/2 teasp                   Black Soya Sauce
                    120 ml                       Water
                        1 Tabsp                 Corn Flour

  1. Season the meat with the Marinade for 15 minutes. Cling film & refrigerate.
  2. Put "B" in a bowl; stirring to incorporate the Corn Flour well.
  3. Put 2 Tabsp of oil in wok when the oil is warm throw in the seasoned meat & stir fry for a short while, then remove meat.
  4. Heat wok with sufficient oil saute garlic till fragrant.  Add in the partially cooked meat, "A".
  5. Stir "B" well to mix the corn flour then add to No.4 & stir fry short while.
  6. Add in the Star Fruit stir fry for short while.  Check for seasoning.
                     Comments in Respect of No.3, the meat is given a quick "fry" in warm oil in order to seal the juices.  Till my next post, xoxo, Ophelia
