Old Cucumber Soup, Non Halal

               Ok another soup for all  you soup lovers out there..  :) for all my cooking and baking recipes in my Blog, only use cake measuring spoons and cake measuring cups.

                            Old Cucumber Soup


                       1                      Carrot
                       4                      Dried Scallops
                       2                      Scallops
                       1 Tabsp          Bailey
                                                Small handful Kei Chee
                       3.5  Litres        Water


                      500 gm               Ribs


                    500 gm                 Old Cucumber
                                                  Salt to taste

  1. Boil "A" in 5 ply pot [as the base is thicker and more appropriate for long cooking] & once boiling Reduce fire to Medium heat put in "B" & simmer for 1 1/2 hours, skimming off the scum/impurities.
  2. After simmering for 1 1/2 hours, put in "C" bring it to a boil then simmer for 30 - 40 minutes till Old Cucumber is cooked.  Check for taste and adding salt to your taste if necessary.
