Birthday cake with dresses & shoes theme


           Wow what a month it has been since I last posted. Was multi tasking!!! Marinating my dried fruits for my fruit cake Christmas orders, molding numerous shoes & dresses & had fun frilling the ruffles for the dresses but it was by no means easy; as it took an hour just to mold & frill one dress & I wanted to place the ruffled dresses around the side of the cake & placing the shoes on the top & then molding footballs & Daisies for 2 other Birthday cakes.

          


                                         Hehe, pair of different color tone for each day of the week :) 




               One thing for sure, the Birthday girl & some of the guests were over the moon & though, they were young adults, they couldn't quite get pass the chance of being a little girl again, though we can't push back the clock, I "manage" to achieve that impossibility for just a little while.

Moulding Daisies


         I have always had a fascination for flowers & their color make a big visual impact & making these gum paste Daisies made me happy although the degree of difficulty of moulding Daisies is a 9 to me as I always love to roll it as thin as I possibly could so that it looks life like & Then unmoulding same from the mould THAT takes a lot of patience & determination!!!



            And placing them on a Black back ground, to me, gave a bigger visual impact!!!

My maiden attempt at Fondant Ribbons

         I feel very pumped indeed!!! I received a few Wilton tools, of course one of it is for making ribbons, as a gift & it wasn't even my birthday or Christmas thus it was unexpected & very pleasant indeed & making ribbons, it would be best to use Fondant & on saying this, as I am more into using my gum paste which I make from scratch for most of my decor work, I wanted to buy a good Fondant which is pliable as I don't want to add some more CMC, which makes the Fondant "slightly" harder & easier to work on so away I went to Cake Connections & bought the Fondant from there. 

          I bought a 2.5 kg of White Fondant & two 750 gm of Brown Fondant. I had a birthday gathering & I could use this Fondant Ribbons as the decor.   I have not decided as to what cake I would bake; perhaps, a Sugee cake which would withstand the weight of the Fondant then cover same with White Fondant; make some Brown Ribbons then I will criss cross 2 Brown Ribbons, sort of tying it like a present & place the Fondant Ribbons/Bow on top; yup like a present & maybe, just maybe, use a small round cutter & cut Brown circles & adhering same to the White Fondant intermittenly to give it a more joyful look but I first needed to make the Bow & as it is Fondant, it takes a longer time to dry so I started making a few of them each day. I started with White, narrower Bows & then progressed to Brown Fondant bows. 

               After rolling the Brown Fondant with my marble rolling pin, I used a Wilton roller which had Roses embossed on the roller, I used this Wilton roller for the final roll so that the Roses get imprinted on the Brown Fondant. Then I used my, ahem, new gift, the Wilton Ribbon cutter, & cut them into straps & forming it into a loop, I need to place them in my long, wooden rolling pin in order for them to dry & shape to adhere. I then did a double take; how am I going to dry them? I couldn't place the long, wooden rolling pin down to dry as then, it may flatten the Roses? I couldn't very well be holding the rolling pin!!! I have a Wilton drying rack, which I use for drying my flowers, but that was not suitable as the arm of the dry rack was flat so I can place the Fondant loops on it as it wouldn't retain the round shape. The solution was just staring at my face, so to speak!!! I had a basket on my dinning table, so I quickly went in search of 2 "S" pins, slotted the long wooden rolling pin on it & viola, a make shift drying rack!!! Haha, you know the saying, Necessity is the mother of invention?

                   Waited for a few hours before I gingerly took the Bows out from the rolling pin just to have a check as I knew I needed to dry it for a couple of days as Fondant does not harder fast enuf as compared to Gum Paste.






                


                 I love the purrfect symmetry in its shape & the roundness of it all!!! 
  


                  
               And now for the down side :(  yup, everything has a good side & a down side.  I was also trying to achieve something I thought would be hard & yet easy, if you know what I mean :) I was using the eyelet mould to try to make some holey effect, if you see the FIRST picture above, you can see what I mean.  I knew it was going to be hard to achieve same & that probably can't be attempted just by one attempt.  I have always used Gum Paste as a medium for my decor which, of course I made myself after attending for the class many years ago.  I decided to use store bought Fondant & I bought the product from Cake Connection & saw at the back of the package that it was a product of NZ, I was happy. I rolled it slightly too thin. Thought that the bows would look more dainty but I forgot to take into account that the holes would sag slightly when I place it in the rolling pin.  So I had temporarily happiness when I saw how beautiful the holes made the Bow; like a see through effect; but my happiness was temporarily as after I hung it on the long wooden rolling pin to dry; it fell down, oooh nooooo!!! But it doesn't matter because going to doing it again, roll it slightly more thicker, most probably tonight & then it will be a battle of the wills between Mr Holey & me.

Orange cup cakes



            I was lazying about when all of a sudden the Hubs informed me that we were going to attend the BEC Mass that evening.  I scrambled to my feet as it was customary that the BEC members bring something for pot luck & as it was nearly 5 pm, I thought the fastest that I could bake was cup cakes but I wanted it to be special so I thought that instead of using cold water, I would instead use fresh Orange juice & I was so happy that I had these dainty colored cup cake wrappers. 

             3 months ago I went shopping & saw these adorable colored cup cake wrappers & I couldn't resist the urge to buy some & I was waiting for an occasion when I could do some test baking on them & as I didn't want to smug the wrappers when pouring the batter, I took out my long "nose" measuring jug which I dubbed as Pinocchio which I bought 11 years ago when I saw the Chef using same & promptly asked her to get one for me & am I so glad I bought Pinocchio as I poured the batter gingerly into the wrappers & there was no spillage!!! 

              I always encourage my circle of young baking friends to always buy anything that they find irresistible & practical [Provided of course it didn't cost the earth as didn't want to be a bad influence :) ] as sometimes when you need same, you can't find same in the market.

Vanilla Panna Cotta with a Blue Berry coulis


                     After baking a Palova that someone ordered for their office dinner, I had some balance of Whipping Cream & I didn't want to, haha, bake [had baked 2 recipes of meringue & was too tried to bake some more] neither did I want to waste the Whipping Cream, so the next day, I decided to make some Panna Cotta.

                     Cooked a fresh batch of Blue Berry coulis & used that as a topping & was very happy that the Hubs loved same. 



                        I decided to make a Blue Berry coulis & use it as a topping as the Vanilla Panna Cotta that I learnt needed something to jazz it up. Tasted good & it had a better visual effect to boot!!! 




                          Straining the coulis for a smooth texture & just for kicks, I added a tablespoon of a Cherry Liqueur for a better flavour :)

Back into the game again


              Yup it has been a while since I last posted. Now back into action again. Saw a picture tutorial on the net & was very fascinated with it. Trying to [operative word "trying"] to see whether I can mould it & trying to give it my take as what the maker of the gumpaste did was pretty impressive. 

                   As each component needs to be dried completely & sturdy enuf, it would take a few days before I can complete same.  A Big IF is IF I do succeed, fingers crossed. A big thank you to the maker.




              Was side tracked due to some cake orders thus didn't have time to continue with this & as I have almost finished the gum paste decorations for a birthday cake order which is scheduled for collection next week, I had some free time today & added the body to the legs. Still don't know whether I would succeed doing this as, at the moment, gravity is getting the better of me :) but won't give up just yet!!!

Gum paste decor


             Been pretty busy lately, thus the silence.  I was thinking that besides selling my cakes, I wanted to diversify a little but still on the same "vein". I wanted to explore into the area where my friends, who bake but either did not have the time to make gum paste decorations or who didn't know how, could buy from me. I don't profess to know how to mould everything but if they have seen the gum paste decorations that I post on FB.

                  So that was exactly what I did a month ago!!! I was thrilled when one of my friends asked me whether I could mould something for her grandson & this was what I did. 







                        Drying the head properly before I proceeded to do the paws!!! 


                          This was the hardest & my first maiden attempt at this. 

                    Real glad that I was gung ho & brave enuf to take this commission & very pleased that my friend was happy with it.

Bob, my second gum paste clown

             I never attempted to make any "standing" gum paste and I tot that since I had still a lot of gum paste, I would try my hand doing same. Reason why I never attempted was because I tot it would be hard to do same :) so meet Bob. 


           Yikes, I forgot to do his eye brows and eye ball!!! Actually when I saw a clown posted in pinterest, one of his hands was in one of the braces [yup, you "heard" me right!!! I goggled to check what it was called :) ] I though I would duplicate the same pose. It wasn't easy but I was determined to do it!!! So I used a sharp knife & gave a cut on its right arm so that I could bend the arm & then I slid it in one of the braces to support the arm.  I knew that once the arm has been dried I would have to remove the brace and make another one. 


                So the Hubs asked me why was the clog so big? Told him so that it would help to support the body!!! 



                    Inserting some tissue in the braces so that it could make enuf space for the hand to be inserted!!!

                     Once the braces have dried, removed the tissue. 


                      Had to also remove the right brace as it didn't have a good finish!!! Saved the button though!!!

Coffee flavoured Macadamia Shortbread



              I was wondering what to bake for tea. Aah, I thought that these would go well with a hot cup of Nescafe.





               I had 1 1/2 trays of these shortbread & brought them for the cell Praise & Worship as, pardon me, they were too darn good to be stored in a container.

Vanilla Sponge batter


        It has indeed been quite a while since I blogged!!! Been busy baking Coffee flavoured Macadamia Shortbread and Chocolate cakes for sale and since I had a little time on my hands I thought I would upload a picture of my Sponge cake batter and to share a tip for "young" bakers. 

              Back in the eighties a bunch of us started "following" a few reknown Pastry Chefs and we attended most of their classes, from cakes to bread and to pastries!!! We were all fired up with a Passion for Baking and we try as much as possible to keep our Saturday afternoons free so that we can learn their specialities and what a ride we had!!! And from baking, it was only "logical" that we took up cooking classes as a spin off; Chinese cooking, Thai cooking, Indian cooking, Fusion, etc. etc. and the amount of files I had to store all my treasured recipes. One thing for sure I am real happy that I had the wisdom to start learning all this and had no regrets spending thousands of dollars trying to learn as much as I could as I knew from the onset that when I retired I could spend my time doing something that I loved. Sorry I have, again, digressed from what I wanted to "say".

               I remember what one of the Chef use to tell us with regard to a good Sponge cake.  He told us that to know whether we will have a good Sponge is that when we pour the Sponge batter onto our baking tin, the batter should flow like a Ribbon :)

Part 2 Barbara and Kelly


            Yay finally I baked 2 small Orange cakes two days ago; baked two just for insurance in case I spoil one cake.


             Then I made the Butter Icing today, as I needed to bring something for fellowship and thought that this time I would bring the Barbi for the children. Made a Fondant dress for Barbara & a Butter Cream dress for Kelly. Yes I named the dolls Barbara and Kelly :)

Barbara - Part 1


              I have always been fascinated with Barbi dolls and I knew that the next project I wanted to tackle, when I had time at my disposal, was to, first, make a gum paste dress for my Barbi & then bake a cake & insert my Barbi in the cake.

              Well, I have never attempted moulding a dress from scratch nor for that matter, baked a tiny cake that would matching nicely, in terms of the height, with the doll. I dug deep into all my boxes to find a mould I could use for a top.  I started with a heart mould, & I had so many, many different heart moulds but the top became too revealing!!! Then I found a mould that was primarily for making Orchids which seemed purrfect for me as the top of the mould made it look like scallops.  I started with a White Fondant then I used Red & Blue Dust to get the slight purple look, as I love Purple!!! Then I noticed that the scallops were not noticeable so I used a Blue paste and painted the top of the scallops & voila, I was happy that the Blue gave it a nice touch. Then I steamed the colors with the aid of a boiling kettle of water, got the tip from various online tutorial & the steaming made the Blue even more prominent!!!

               I have always been one who could not resist buying things that took my fancy & there are times when that would be "sleeping" in a box until one day when I find a use for same so I was glad that I bought would now serve as a bottom part of her dress so I need to find some time next week to bake the cake and keeping my fingers crossed that cake wouldn't be a problem.
